Spiced Peach Oatmeal Muffins

Deliciously moist summer brunch muffins.
Ingredients:
  • 1 cup quick cooking oats
  • 1 cup buttermilk
  • 0.33333298563957 cup brown sugar
  • 0.33333298563957 cup applesauce
  • 0.25 cup molasses
  • 1.3333300352097 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1.5 cups pitted and diced fresh peaches
  • 2 tablespoons white sugar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare your muffin tray by greasing the cups or lining them with paper liners.
  • Combine oats, buttermilk, brown sugar, applesauce, molasses, and eggs in a large bowl. In a separate bowl, mix flour, baking soda, and baking powder. Gently fold flour mixture into the wet ingredients until just combined. Stir in peaches, then scoop batter into muffin cups.
  • Preheat the oven and bake the muffins. Mix sugar and cinnamon. Sprinkle muffins with cinnamon sugar, then bake again until done.
