Spiced peach relish

Delicious peach relish to elevate your curries or stews, can be prepared ahead up to 1 week.
Ingredients:
  • 310ml (1 1/4 cups) white wine vinegar
  • 7 (about 1kg) just-ripe slipstone peaches, halved, stones removed, coarsely chopped
  • 1 green apple, halved, cored, coarsely chopped
  • 95g (1/2 cup) chopped dried peaches
  • 5.00 gm ground ginger
  • 4 whole green cardamom pods
  • 1 x 7cm cinnamon stick
  • 400g (2 cups, firmly packed) brown sugar
Instructions:
  • In a large saucepan over high heat, combine vinegar, peach, apple, dried peach, ginger, cardamom, and cinnamon. Bring to a boil, then reduce heat to medium. Simmer and stir occasionally for 30 minutes until the peach is tender.
  • Stir in the sugar and simmer gently until the mixture thickens, stirring occasionally, for about 40 minutes.
  • Cleanse the 750ml (3-cup) glass preserving jar and lid thoroughly in hot, soapy water, then rinse and air dry on a rack.
  • Pour the steaming relish into the cozy jar and cover tightly. Flip it over for 2 minutes, then carefully stand upright and let cool to perfection.
