Spiced peach chutney

Delicious spicy-sweet peach chutney.
Ingredients:
  • 18 ripe peaches
  • 2 fresh red chillies
  • 3 red onions
  • 1 large thumb-sized piece of ginger
  • 1 bunch of fresh basil
  • 1½ teaspoons cumin seeds
  • 3 cloves
  • olive oil
  • 250 ml cider vinegar
  • 5 fresh bay leaves
  • 300 g light brown sugar
  • sea salt
  • freshly ground black pepper
Instructions:
  • 1. Heat a barbecue or griddle pan until very hot. Halve and remove the pits from the peaches, then grill cut-side up for 3 to 4 minutes until charred and softened. Transfer to a tray, skin-side up, to cool. Once cooled, remove and discard the skins. 2. Prick the chillies with a knife and grill until blackened all over. Transfer to a bowl, cover, and let cool. Chop the onion and ginger, and pick and finely chop the basil leaves and stalks. Toast the cumin and cloves in a pan, then grind into a powder. Heat some olive oil in the pan, add onion, ginger, and basil stalks, and cook until soft. 3. Peel, deseed, and chop the chillies. Chop the peaches and add to the pan with chillies, vinegar, bay leaf, sugar, spices, and water. Season and simmer for 40 minutes until thick. Stir in basil leaves. 4. Remove from heat, cool, and discard bay leaves before serving.
