Fresh Spiced Peach Jam

Spiced Peach Jam: A sweet and thick breakfast spread with cinnamon, nutmeg, and allspice flavors.
Ingredients:
  • 6 cups peeled and chopped fresh peaches
  • 3 cups white sugar
  • 3 tablespoons lemon juice
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground allspice
Instructions:
  • Place the canning jars in simmering water while preparing the jam. Wash the new lids and rings in warm soapy water.
  • In a large pot, combine peaches, sugar, lemon juice, cinnamon, nutmeg, and allspice. Bring to a boil and cook for about 15 minutes until peaches are soft, stirring occasionally. Then, remove from heat.
  • Use an immersion blender or potato masher to mash the peaches to your preferred size and texture. Then, put the pot back on the heat and cook the jam until it thickens, approximately 10 more minutes.
  • Fill hot jars with jam, leaving a 1/4-inch space at the top. Clean rims with a damp cloth, then seal with lids and rings.
  • In a large stockpot, position a rack at the bottom and fill halfway with water. Bring to a boil. Carefully lower jars into the pot, spaced 2 inches apart. Add more boiling water to ensure jars are covered by at least 1 inch. Cover the pot, bring the water to a rolling boil, and process for 10 minutes.
  • Take the jars out of the stockpot and allow them to cool on a cloth-covered or wood surface, spaced a few inches apart, for approximately 12 hours. Press down on the center of each lid with your fingertip to check for a secure seal. Afterward, remove the rings, and store the jars in a cool, dark place.
