Old Fashioned Peach Cobbler

Classic peach cobbler: Flaky pastry filled with fresh peaches in a citrus-spiced filling.
Ingredients:
  • 2.5 cups all-purpose flour
  • 4 tablespoons white sugar, divided
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 large egg
  • 0.25 cup cold water
  • 1 tablespoon butter, melted
  • 3 pounds fresh peaches - peeled, pitted, and sliced
  • 0.75 cup orange juice
  • 0.25 cup lemon juice
  • 0.5 cup butter
  • 2 cups white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Create the crust by sifting together flour, 3 tablespoons sugar, and salt in a medium bowl. Use a pastry blender to work in the shortening until the mixture looks like coarse crumbs. In a small bowl, whisk together an egg and cold water. Pour over the flour mixture and use your hands to shape the dough into a ball. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Roll out half of the cold dough until it is 1/8-inch thick. Line a 9x13-inch baking dish with the dough, making sure to cover the bottom and halfway up the sides.
  • Bake until beautifully golden brown in the preheated oven for around 20 minutes.
  • Prepare the filling by combining peaches, orange juice, and lemon juice in a large saucepan. Add butter and cook over medium-low heat until melted. In a separate bowl, mix sugar, cornstarch, cinnamon, and nutmeg, and stir them into the peach mixture until well combined. Pour the filling into the baked crust.
  • Roll out the rest of the dough to a 1/4-inch thickness. Slice it into 1/2-inch-wide strips. Create a beautiful lattice over the peaches with the strips. Sprinkle 1 tablespoon of sugar on top, followed by a drizzle of melted butter.
  • Bake in the preheated oven until the top crust turns a beautiful golden brown, about 35 to 40 minutes.
