Indulgent peach cobbler made with sugar-tossed peaches and zesty lemon juice. Topped with homemade biscuit dough, baked to bubbly perfection.
Ingredients:
  • 9 fresh peaches
  • 2 tablespoons fresh lemon juice
  • 0.5 cup white sugar
  • 1.3333333730698 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 cup butter, chilled
  • 0.66666668653488 cup buttermilk
  • 2 teaspoons white sugar
  • 0.25 teaspoon freshly grated nutmeg
Instructions:
  • Begin by preheating the oven to 400°F (200°C).
  • Quickly blanch peaches in boiling water for about 1 minute until the skin loosens. Using a slotted spoon, transfer peaches to cold water. Peel off skins.
  • Cut the peaches into wedges and arrange them in a deep 10-inch pie plate or a 2-inch-deep 2-quart baking dish. Drizzle the peaches with lemon juice and sprinkle with 1/2 cup of sugar. Cover the dish with foil.
  • Place in the preheated oven for 15 minutes, or until the peaches are hot and bubbly.
  • Combine flour, 3 tablespoons sugar, baking powder, and baking soda in a bowl. Use a pastry blender to mix in butter until it resembles small peas. Pour buttermilk over the mixture and toss with a fork until it clumps together.
  • Take the warm peaches out of the oven, reveal them, and dollop generous spoonfuls of dough over the peaches. Combine 2 teaspoons of sugar and nutmeg in a small cup, then sprinkle the mixture over the biscuits.
  • Bake biscuits until they turn golden brown, approximately 30 minutes. Allow the dish to cool on a wire rack for 10-15 minutes before serving.
