Pineapple and peach salsa

Whip up a quick and easy fresh salsa with cold sliced ham.
Ingredients:
  • 1/2 pineapple, peeled, finely chopped
  • 1 peach, finely chopped
  • 1 small green capsicum, finely chopped
  • 1/2 small red onion, finely chopped
  • 1cm piece fresh ginger, finely grated
  • 2 tsp finely grated lime rind
  • 42.00 gm lime juice
  • 18.20 gm extra virgin olive oil
  • 10.00 gm caster sugar
  • 40.00 ml finely chopped fresh coriander, plus extra sprigs to serve
  • 20.00 ml finely chopped fresh mint leaves, plus extra sprigs to serve
  • Sliced leg ham, to serve
Instructions:
  • Mix together the pineapple, peach, capsicum, onion, ginger, lime zest and juice, oil, sugar, coriander, and mint in a bowl. Season with salt and pepper to taste.
  • Garnish sliced ham with salsa and sprinkle extra coriander and mint sprigs on top before serving.
