Whip up a delicious tropical twist on chicken tacos with zesty mango-peach salsa and juicy pineapple in your slow cooker.
Ingredients:
  • 1.5 (16 ounce) packages chicken breast tenderloins
  • 1 (1 ounce) package taco seasoning
  • 1 (16 ounce) container mango-peach salsa
  • 1 teaspoon cayenne pepper, or to taste
  • 1 teaspoon chili powder, or to taste
  • 1 teaspoon garlic powder, or to taste
  • salt to taste
  • 1 (20 ounce) can pineapple chunks, drained with juice reserved
  • 1 medium onion, sliced
Instructions:
  • In a bowl, toss chicken with taco seasoning until well coated. Transfer to a slow cooker and add salsa, cayenne pepper, chili powder, garlic powder, and salt. Stir to combine all ingredients.
  • Cook the chicken covered on Low for 4 to 5 hours until it is ready to shred. Remove the chicken, shred it using 2 forks, and return it to the slow cooker.
  • Break up the pineapple chunks, add them to the slow cooker along with 1/4 cup of pineapple juice (adjust to your liking), and onion slices. Slow cook until the sauce bubbles and becomes fragrant, for 1 to 2 hours on Low.
