Easy slow cooker chicken tacos recipe

Prepare dinner in 10 minutes, let the slow cooker do the rest!
Ingredients:
  • 1.25kg Chicken Thigh Fillets, trimmed
  • 2.50 gm smoked paprika
  • 375g jar chunky salsa medium
  • 1 small orange, juiced
  • 1 lime, juiced, plus extra, to serve
  • 420g can black beans, rinsed, drained
  • 12 corn tortillas, warmed
  • 117.50 gm Light Sour Cream, to serve
  • 400g pkt coleslaw mix, dressing reserved for another use
  • 2 avocados, sliced
  • Fresh coriander sprigs, to serve
  • Chilli sauce, to serve (optional)
Instructions:
  • Marinate chicken in slow cooker with cumin, paprika, and ground coriander for 1 hour, then season and cover.
  • Combine the salsa, orange juice, and lime juice. Mix well. Cover and cook on High for 4 hours or until the chicken is very tender.
  • Mix the black beans in gently. Cover and let it cook on High for 30 minutes or until warm. Turn off the slow cooker. Shred the chicken with 2 forks until coarse. Let it rest for 30 minutes to thicken.
  • Place a generous amount of coleslaw, chicken mixture, avocado slices, fresh coriander, and a dollop of sour cream on the tortillas. Drizzle with chili sauce if desired and serve with additional lime wedges on the side.
