Sweet potato, peach, and pineapple bake topped with salsa - delicious appetizer to pair with burgers or turkey sandwiches.
Ingredients:
  • 3 pounds sweet potatoes (about 3 inches in diameter)
  • 1/2 teaspoon garlic salt
  • 1 tablespoon olive or vegetable oil
  • 1 jar (16 ounces) thick-and-chunky salsa
  • 1 cup frozen sliced peaches, thawed and chopped
  • 1 can (8 ounces) pineapple tidbits, drained
Instructions:
  • Preheat the oven to 375°. Grease large cookie sheets. Cut potatoes into 1/4-inch slices and lay them out in a single layer on the cookie sheets. Season with garlic salt and drizzle with oil.
  • Bake for 10 minutes, then turn potatoes and continue baking for 15 to 20 minutes more until golden brown.
  • Combine all the remaining ingredients and then enjoy the chips with the salsa.
