Make this delicious overnight breakfast bowl ahead to let the oats absorb the fruity flavors.
Ingredients:
  • 375g pineapple
  • 2 peaches, stoned, chopped
  • 1 mango, stoned, peeled, chopped
  • 60ml almond milk
  • 1 tsp vanilla bean paste
  • 65g rolled oats
  • 3 slices pineapple, extra
  • 1 peach, stoned, sliced, extra
  • 40g fresh raspberries or frozen raspberries
  • Mint leaves, to serve
Instructions:
  • Combine the pineapple, peach, mango, almond milk, and vanilla in a food processor, blending until creamy.
  • Pour the pineapple mixture into a spacious bowl. Mix in the oats until evenly combined. Cover and refrigerate overnight for a refreshing chill.
  • Transfer the chilled pineapple mixture into a clean food processor and blend until silky smooth.
  • Spoon the pineapple mixture into serving bowls and level the top. Optionally, use a 3cm flower cutter to create pineapple blossoms from the extra pineapple.
  • Arrange the peach slices, pineapple blossoms, and raspberries over the pineapple mixture. Garnish with fresh mint leaves before serving.
