Mozzarella & squash skewers

Elevated retro party pineapple and cheese sticks - simple and stunning!
Ingredients:
  • 1 small butternut squash
  • 1 teaspoon dried chilli flakes
  • 1 tablespoon coriander seeds crushed
  • 1 pinch finely grated nutmeg
  • 2 cloves crushed
  • 1 sprig fresh sage
  • olive oil
  • 3 x 125 g buffalo mozzarella balls
  • 1 fresh red chilli sliced
  • a few fresh basil leaves
Instructions:
  • Preheat your oven to 200°C/400°F/gas 6. Halve the squash, remove seeds with a teaspoon, and cut each half into 4 wedges. Place in a bowl, season with chilli, coriander, nutmeg, cloves, salt, and pepper. Add sage leaves and a splash of oil. Transfer to a roasting tray and roast for 40 minutes until tender and golden. Cut the roasted squash into cubes, discard the skin, and tear the mozzarella into pieces. Skewer a chili ring, folded basil leaf, mozzarella, and squash cube onto a cocktail stick. Repeat with remaining ingredients. Drizzle with olive oil before serving.
