Creamy Butternut Squash Casserole

Bake creamy butternut squash casserole with melty mozzarella for a hearty vegetarian dish.
Ingredients:
  • 2 small onions, chopped
  • 1 (2 1/2 pound) butternut squash - peeled, seeded, and cubed
  • 6 cloves garlic, crushed
  • 1 tablespoon water, or as needed
  • 3 eggs
  • 0.75 cup sour cream
  • 1 cup grated Parmesan cheese
  • 0.33333334326744 cup chopped fresh basil
  • 0.25 teaspoon ground black pepper
  • 0.5 (8 ounce) package coarsely shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and generously grease a 9x13-inch casserole dish.
  • In a skillet over medium heat, sauté onions in olive oil until softened, about 10 minutes. Add squash and garlic, season with salt, and cook until squash is slightly tender, about 10 minutes, stirring occasionally. Add water if needed. Transfer mixture to casserole dish.
  • Whisk eggs gently in a bowl, then mix in sour cream, Parmesan cheese, basil, and black pepper. Pour the egg mixture over the squash mixture and sprinkle with mozzarella cheese.
  • Roast in the oven until the squash is tender and the mozzarella cheese is bubbling, for approximately 30 minutes.
