Irresistible creamy butternut squash mac and cheese loved by all.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 3 cups mashed cooked butternut squash
  • 0.5 cup skim milk
  • 0.5 cup cottage cheese
  • 0.33333334326744 cup shredded Cheddar cheese
  • 2 tablespoons finely grated Parmesan cheese
  • 1 teaspoon olive oil
  • 0.125 teaspoon chicken bouillon powder
  • 1 pinch ground nutmeg
  • 1 pinch cayenne pepper
  • sea salt and freshly ground black pepper to taste
Instructions:
  • 1. Boil a pot of lightly salted water. Add elbow macaroni and cook until al dente, about 8 minutes. Drain.
  • Combine the cooked squash in a food processor until smooth. Transfer to a large bowl and mix in cooked pasta, milk, cottage cheese, Cheddar cheese, Parmesan cheese, olive oil, bouillon, nutmeg, cayenne pepper, sea salt, and black pepper until creamy. Serve promptly.
