Indulge in a crowd-pleasing vegan mac and cheese with creamy butternut squash for a delightful twist!
Ingredients:
  • 1.5 (12 ounce) packages gluten-free elbow pasta
  • 1 pound butternut squash, peeled and cut into 1-inch pieces
  • 1.5 cups soy milk
  • 1 cup vegetable broth
  • 0.5 teaspoon ground cayenne pepper
  • 0.5 teaspoon ground nutmeg
  • 2 tablespoons chopped parsley, or to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. Add gluten-free elbow macaroni and cook until al dente, about 10 minutes. Drain.
  • In a pot, simmer butternut squash with soy milk and vegetable broth until tender, around 12 minutes. Blend until smooth with an immersion blender. Season with salt, pepper, and nutmeg. Mix in cooked macaroni and top with chopped parsley before serving.
