Delicious summer squash and mozzarella stuffed tomatoes baked with fresh basil. A crowd-pleasing side dish perfect for summer.
Ingredients:
  • 3 tomatoes
  • 1 teaspoon salt, or as needed
  • 1 summer squash, finely diced
  • 0.5 cup dry herb stuffing mix
  • 2 teaspoons dried basil
  • 0.25 teaspoon ground black pepper
  • 0.25 cup shredded mozzarella cheese
Instructions:
  • Preheat oven to 350°F (175°C).
  • Cut the tomatoes in half horizontally, season each cut side with salt, and let them rest cut side down on paper towels for 5 minutes. Scoop out the tomato halves, keeping the walls 1/4 inch thick; discard the seeds from the pulp and chop it finely.
  • Combine chopped tomato pulp, squash, herb stuffing mix, basil, black pepper, and mozzarella cheese in a bowl. Mix well, then stuff the mixture into the hollowed-out tomato halves.
  • Roast in the oven until the squash is fork-tender and the cheese is gooey, approximately 20 minutes.
