Delicious peach empanadas with flaky buttery pastry and a lightly spiced fruit filling offer a delightful twist on traditional empanadas.
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon white sugar
  • 0.5 teaspoon salt
  • 1 cup cold butter, cut into 1/2-inch pieces
  • 0.25 cup cream cheese
  • 0.25 cup sour cream
  • 2 ripe peaches, peeled and cut into 1-inch pieces
  • 3.5 tablespoons white sugar, divided, or more to taste
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt
  • 0.5 egg, beaten, or as needed
Instructions:
  • Prepare the pastry by combining flour, sugar, and salt in a medium bowl. Use two knives or a pastry cutter to cut in the butter. Gradually incorporate the cream cheese and sour cream until a cohesive dough forms.
  • Transfer the dough onto a work surface. Gather crumbs quickly and mold dough into a square. Fold the square in half and flatten it into a larger square using a rolling pin. Fold in half once more. Roll out the dough once, then fold it into thirds, resembling a letter. Wrap the dough in plastic wrap and refrigerate until firm, approximately 1 hour.
  • After refrigerating the dough for 30 minutes, prepare the filling by combining peaches, 3 tablespoons of sugar, and cinnamon in a small bowl. Allow it to rest for approximately 15 minutes before transferring the mixture to a strainer set over a bowl. Let the excess juices drain for 15 minutes, stirring occasionally.
  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • On a floured surface, roll out the pastry dough to about 3/8 inch thick. Cut out 15 to 20 circles that are 4 to 6 inches in diameter. Put 2 teaspoons of filling in the center of each circle. Fold the dough in half over the filling and seal the edges together by pressing with your fingers or using a fork for a decorative touch.
  • Arrange empanadas on the baking sheet, giving them a shiny coat of beaten egg and a generous sprinkle of the remaining sugar.
  • Bake in the preheated oven until golden brown, about 12-15 minutes. Allow to cool for 5 minutes before serving.
