Zesty citrus peach pie in a buttery crust, topped with fluffy whipped cream. Versatile filling perfect for pies or cakes.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon white sugar
  • 0.5 cup shortening
  • 6 tablespoons ice water, or as needed
  • 3 tablespoons cornstarch
  • 1 cup white sugar
  • 1 cup orange juice
  • 1 cup water
  • 0.5 lemon, juiced
  • 10 fresh peaches - peeled, pitted, and sliced
Instructions:
  • Heat the oven to 450°F (220°C).
  • Mix flour, 1/2 teaspoon sugar, and salt in a bowl. Use your fingers to blend in shortening until pea-sized lumps form. Add water and mix until dough forms a ball. Knead briefly, then let rest. Roll out into a 12-inch circle, place in a 9-inch pie plate, and prick with a fork. Invert the pie plate and transfer to the dish. Note: Thinner metal pans work best for this method over glass.
  • Bake the crust in the preheated oven for 8 to 10 minutes, or until golden. Let it cool, then flip it back into the original pan to prevent sagging without using pie weights.
  • Combine cornstarch and sugar in a saucepan, then mix in orange juice, water, and lemon juice. Heat over medium heat, stirring occasionally until the mixture thickens and becomes clear. Remove from heat and refrigerate until chilled.
  • Layer fresh sliced peaches and chilled citrus sauce in pie crust, beginning and ending with the sauce. Serve with whipped cream or ice cream.
