Peach pie with layers of fresh and pureed peaches in a buttery crust, topped with a peach glaze. Serve chilled with ginger ice cream for a delicious dessert.
Ingredients:
  • 1 (9 inch) pie shell, baked
  • 1 cup white sugar
  • 0.5 cup water
  • 3 tablespoons cornstarch
  • 2 cups fresh peaches, pitted and mashed
  • 0.25 teaspoon ground nutmeg
  • 4 cups fresh peaches - pitted, skinned, and sliced
Instructions:
  • In a saucepan over medium heat, mix sugar, water, cornstarch, butter or margarine, mashed peaches, and nutmeg until the mixture is clear and thick. Stir in vanilla.
  • Layer the pie shell with slices of fresh peaches, alternating with the glaze. Chill in the refrigerator.
