Moist zucchini cake with cream cheese frosting or plain for a delightful treat.
Ingredients:
  • 2 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 0.25 teaspoon baking powder
  • 2 cups grated zucchini
  • 1.5 cups white sugar
  • 3 eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a bowl, mix together flour, cinnamon, baking soda, salt, and baking powder. In a separate bowl, combine zucchini, sugar, vegetable oil, eggs, and vanilla. Gently combine the flour mixture with the zucchini mixture. Fold in walnuts, then pour the batter into the prepared pan.
  • Bake until a toothpick inserted in the center comes out clean, approximately 45 minutes in the preheated oven.
