Grandma's classic zucchini kuchen: moist cake with walnuts, cinnamon, and powdered sugar topping.
Ingredients:
  • 1 teaspoon butter
  • 4 cups grated zucchini
  • 2 cups white sugar
  • 0.75 cup vegetable oil
  • 2 tablespoons vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1.75 cups ground walnuts
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • confectioners' sugar, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a large loaf pan with butter.
  • Combine zucchini, sugar, vegetable oil, eggs, and vanilla extract in a bowl and mix well.
  • In a bowl, mix flour, walnuts, cinnamon, baking powder, and salt. Gently fold the flour mixture into the zucchini mixture until well combined. Transfer the batter into the prepared loaf pan.
  • Bake until a toothpick inserted in the center comes out clean, 60-80 minutes. Cool in the pan for about 30 minutes, then sprinkle with confectioners' sugar.
