Zucchini Stir-Fry

Savory soy and sesame zucchini stir-fry with a touch of sweetness.
Ingredients:
  • 1/4 cup soy sauce
  • 2 tablespoons water
  • 2 tablespoons toasted sesame oil, divided
  • 2 teaspoons rice wine vinegar
  • 2 teaspoons sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon crushed red pepper flakes
  • 1 (1-inch) piece fresh ginger, minced (1 tablespoon)
  • 3 cloves garlic, minced (2 tablespoons)
  • 1/2 medium yellow onion, thinly sliced
  • 2 medium zucchini, cut into 1/4-inch half moons
  • White and/or black sesame seeds, for garnish
Instructions:
  • Create the sauce by whisking together soy sauce, 2 tablespoons water, sesame oil, vinegar, sugar, cornstarch, red pepper flakes, ginger, and garlic in a small bowl. Reserve for later use.
  • Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Sauté onions until fragrant and softened, about 3-4 minutes. Increase heat to medium-high, add zucchini and sauce. Cook until sauce thickens and zucchini softens, about 7 minutes. If needed, deglaze the skillet with a splash of water to remove any browned bits.
  • Plate the zucchini, sprinkle with sesame seeds, and serve immediately. Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave before enjoying again. Don't forget to rate the recipe below if you enjoyed it!
