Mojito-inspired sugar cookies: Sweet, citrusy, and boozy twist, ideal for hosting.
Ingredients:
  • 1.5 cups white sugar
  • 1 cup butter
  • 3 limes, zested
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • 1 teaspoon rum extract, or more to taste
  • 2.75 cups all-purpose flour
  • 1 tablespoon baking powder
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly heated cooking environment.
  • In a medium mixing bowl, use an electric mixer to cream together the sugar, butter, and lime zest until fluffy. Then, add the eggs one at a time, fully incorporating each. Finally, mix in the vanilla extract, mint extract, and rum extract.
  • In a separate bowl, combine flour, baking powder, and salt by sifting them together. Add the mixture to the eggs in three parts, ensuring each addition of flour is fully mixed in before adding more.
  • Chill in the refrigerator for up to 1 hour to enhance the lime zest flavor in the batter. Let it sit at room temperature for about 20 minutes before proceeding.
  • Drop heaping tablespoons of batter onto parchment-lined baking sheets, ensuring a generous 2-inch space between each cookie.
  • Bake in the oven until edges are lightly golden brown, about 10 minutes, remembering to flip halfway through. Let cool on the cookie sheets.
