Quick and delicious warm mini cakes ready in just 35 minutes!
Ingredients:
  • 2 tablespoons cinnamon graham cracker crumbs (2 squares)
  • 3 whole eggs
  • 3 egg yolks
  • 3/4 cup packed brown sugar
  • 1 cup caramel topping
  • 1/2 cup Gold Medal™ all-purpose flour
  • 3/4 cup chopped peeled apple
  • Powdered sugar, if desired
Instructions:
  • Preheat oven to 450°F. Grease 6 (6-oz) custard cups with baking spray that includes flour. Sprinkle 1 teaspoon of cracker crumbs on the bottom and along the sides of each cup.
  • In a large bowl, whisk together whole eggs and egg yolks until smooth. Add brown sugar, caramel topping, and flour, and mix well. Gently fold in the apple. Divide the batter evenly among custard cups and place them on a rimmed baking sheet.
  • Bake for around 15 minutes until the edges are set and the centers are slightly soft but not liquid with slightly puffed tops. Keep an eye on them as they can overbake fast. Take them out of the cookie sheet and allow them to sit for 3 minutes.
  • Use a small knife or metal spatula to loosen the sides of the cakes. Quickly place a heatproof dessert plate upside down over each cup, then flip the plate and cup together to remove the cup. Dust the cakes with powdered sugar and serve warm.
