Molten Butterscotch Cakes

Indulge in delectable butterscotch lava cakes.
Ingredients:
  • 6 teaspoons graham cracker crumbs
  • 1 cup butterscotch chips (6 oz)
  • 2/3 cup butter or margarine
  • 3 whole eggs
  • 3 egg yolks
  • 3/4 cup packed brown sugar
  • 1/2 cup Gold Medal™ all-purpose flour
Instructions:
  • Preheat your oven to 450°F. Grease 6 (6-ounce) custard cups with baking spray that has flour in it, then evenly coat each cup with 1 teaspoon of cracker crumbs.
  • In a small saucepan, melt butterscotch chips and butter over medium heat, stirring constantly. Once melted, allow to cool slightly for about 5 minutes.
  • In a large bowl, whisk together whole eggs and egg yolks until well blended. Mix in brown sugar, melted butterscotch, and flour until smooth. Divide batter among custard cups and place them on a rimmed baking sheet.
  • Bake for 12 to 14 minutes until the sides are set and centers are still soft with puffed and cracked tops. Allow to rest for 3 minutes. Loosen the sides of the cakes with a small knife or metal spatula. Place a dessert plate upside down over each cup and quickly flip it over. Remove the cup and serve the warm cakes.
