Indulge in irresistible Black Forest chocolate puddings for a weekend treat.
Ingredients:
  • 160g good-quality dark chocolate, chopped
  • 160g unsalted butter, chopped
  • 2 eggs, plus 2 extra egg yolks
  • 75g caster sugar
  • 30g plain flour, sifted
  • 240g jar amarena cherries, drained, juice reserved (see note)
  • Cocoa powder
  • Vanilla bean ice cream, to serve
Instructions:
  • Preheat the oven to 180°C. Grease and line the bases of four 1 cup (250ml) dariole moulds with baking paper circles.
  • Melt the chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir until smooth. Remove from heat, then mix in the butter until smooth. Let it cool slightly.
  • In an electric mixer, whisk eggs, yolks, and sugar on high for 5 minutes, until thick and pale. Gently fold the cooled chocolate mixture into the egg mixture, followed by the flour. Fill moulds halfway with batter, place 3 cherries in each, top with remaining batter, and bake for 9 minutes until tops are firm but centers are still molten.
  • Take out of the oven and allow to cool in the molds for 5 minutes, then flip onto warmed plates. Sprinkle with cocoa, garnish with the rest of the cherries, and serve with vanilla bean ice cream and the reserved cherry juice.
