Molten chocolate puddings

Indulgent cheat's fondant with a decadent molten Lindt ball center.
Ingredients:
  • Melted butter, to grease
  • 200g dark chocolate, coarsely chopped
  • 200g butter, chopped
  • 4 eggs
  • 70g (1/3 cup) caster sugar
  • 40.00 ml plain flour
  • 20.00 gm cocoa powder
  • 16 Dark or Milk Chocolate Balls
  • Cocoa powder, extra, to dust
  • Bulla Thickened Cream, to serve
Instructions:
  • Preheat your oven to 180°C. Lightly coat eight 185ml (3/4-cup) ovenproof dishes or pudding moulds with melted butter and line the bases with non-stick baking paper.
  • Combine the chocolate and butter in a saucepan over low heat. Gently stir for 5 minutes until the chocolate is melted and the mixture is smooth.
  • Beat eggs, egg yolk, and sugar with an electric beater until thick and pale in a bowl. Transfer the mixture to a large bowl. Gently fold in the chocolate mixture before sifting over the flour and cocoa powder. Mix until smooth.
  • Transfer two-thirds of the luscious chocolate mixture into the prepared dishes and place them on a baking tray. Scatter Lindt balls in the center, then top them with the remaining chocolate mixture, making it smooth. Bake for 15-20 minutes until just set. Allow it to cool for 10 minutes before gently flipping onto serving plates. Sprinkle with extra cocoa powder and present with a dollop of cream. Enjoy the decadence!
