Molten chocolate puddings with sugared plums

Ingredients:
  • 250g unsalted butter, chopped, plus extra, for greasing
  • 150g plain flour
  • 300g dark chocolate, chopped
  • 4 egg yolks
  • 315g caster sugar
  • 1/4 tsp xanthan gum*
  • 6 red plums, halved, stoned
  • Double cream, to serve
Instructions:
  • Preheat your oven to 180°C. Grease 6 dariole moulds with butter, dust with flour, and shake out excess. Heat chocolate and butter in a bowl over simmering water until melted; then remove from heat.
  • With an electric mixer, whisk together eggs, yolks, and 1 1/4 cups of sugar on medium-high speed for 1 minute until the eggs are light and airy. Next, sift flour and gum over the egg mixture and gently fold in. Finally, add the chocolate mixture and fold until fully incorporated.
  • Spoon mixture evenly into moulds and place on a baking tray. Bake for 16-18 minutes until tops are firm but centres are slightly gooey. Let sit for 2-3 minutes before serving.
  • Preheat the grill on high heat. Place plums cut-side up on an oven tray and sprinkle with remaining sugar. Grill for 3-4 minutes until caramelized. Turn out the puddings onto plates and serve with the grilled plums and cream.
