Grilled beef skewers with peppers, mushrooms, and onions marinated in soy and lemon for a delicious meal.
Ingredients:
  • 0.5 cup soy sauce
  • 0.33333334326744 cup vegetable oil
  • 0.25 cup lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon prepared mustard
  • 1 tablespoon Worcestershire sauce
  • 1.5 teaspoons salt
  • 1 teaspoon coarsely cracked black pepper
  • 1.5 pounds lean beef, cut into 1-inch cubes
  • 16 mushroom caps
  • 8 metal skewers, or as needed
  • 2 green bell peppers, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 large onion, cut into large squares
Instructions:
  • Combine soy sauce, vegetable oil, lemon juice, garlic, mustard, Worcestershire sauce, salt, and black pepper in a bowl. Transfer the mixture to a resealable plastic bag. Add beef cubes, remove excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Place the mushrooms in the bag, remove any excess air, and seal the bag tightly. Let the mushrooms marinate in the refrigerator for an additional 8 hours.
  • Get your outdoor grill fired up to high heat and give the grate a nice light coating of oil.
  • Remove the beef and mushrooms from the marinade, allowing any extra liquid to drip off. Transfer the marinade to a saucepan and bring it to a boil over high heat. Lower the heat to medium-low and let it simmer for 10 minutes. This will be used later for basting.
  • Alternate threading green bell pepper, beef, red bell pepper, mushroom, and onion onto metal skewers until all ingredients are used.
  • Grill the skewers on high heat, regularly turning and basting with the flavorful marinade until they are beautifully caramelized on all sides and the beef is cooked through, approximately 15 minutes.
