Mom's classic beef casserole with mashed potato and melted Cheddar - a comforting dinner favorite with simple ingredients.
Ingredients:
  • 8 large potatoes, peeled and chopped
  • 1 pound lean ground beef
  • 0.5 cup chopped onion
  • 1 (15 ounce) can carrots, drained
  • 1 (15 ounce) can green beans, drained
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed tomato soup
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
  • 1. Boil a large saucepan of salted water. Cook the potatoes until tender but still firm, approximately 15 minutes. Drain and mash them.
  • While the potatoes are cooking, sauté ground beef and onion in a large skillet over medium-high heat until beef is browned and crumbly and onion is tender, about 7 to 10 minutes. Remember to drain excess grease before proceeding.
  • Combine carrots, green beans, and condensed soups with the beef mixture. Pour the mixture into the baking dish. Cover with a layer of mashed potatoes and sprinkle with Cheddar cheese.
  • Bake until the potatoes are lightly golden brown on top, approximately 30 minutes in the preheated oven.
