Blueberry pie: Fresh blueberries in a flaky crust, baked to perfection.
Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 4 cups fresh blueberries
  • 0.66666668653488 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon quick-cooking tapioca
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon grated lemon zest
  • 1.5 tablespoons lemon juice
  • 0.5 tablespoon butter
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and snugly line a 9-inch pie plate with pastry crust.
  • Mix sugar, flour, tapioca, spices, and salt with the blueberries. Stir in lemon juice and rind, then allow flavors to meld for 10 to 15 minutes. Fill crust with mixture, top with butter pieces, and cover with top crust before baking.
  • Place the pie on the bottom rack of the preheated oven and bake for 10 minutes. Lower the oven temperature to 350 degrees F (175 degrees C) and continue baking for an additional 30 minutes. Serve either warm or cold.
