Mom's classic cast iron skillet cornbread: Buttermilk-cornmeal batter baked golden brown in 7 simple ingredients!
Ingredients:
  • 1.5 cups cornmeal
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons vegetable oil, or more to taste
  • 1 teaspoon salt, or to taste
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Prepare a sleek 8-inch cast iron skillet by oiling it lightly. Place it in the preheated oven for 3 to 4 minutes to heat up.
  • In a mixing bowl, combine cornmeal, buttermilk, egg, oil, salt, baking powder, and baking soda, whisk until smooth. Transfer batter to the hot skillet.
  • Bake until golden brown, about 20-25 minutes. Transfer cornbread to serving plate.
