Festive Christmas sugar cookies topped with colorful frosting, perfect for a festive and fun holiday baking with kids.
Ingredients:
  • 1.5 cups confectioners' sugar
  • 1 cup unsalted butter, at room temperature
  • 1 large egg
  • 0.5 teaspoon almond extract
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 3 cups all-purpose flour
  • 0.75 cup unsalted butter, at room temperature
  • 1 large egg white
  • 4 cups confectioners' sugar
  • assorted food coloring
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line 2 baking pans with parchment paper.
  • Combine confectioners' sugar, butter, egg, vanilla, and almond extract in a bowl, use an electric mixer until smooth. Add baking soda and cream of tarter, then flour gradually. Use your hands to knead until dough forms.
  • Place the dough onto a generously floured surface. Roll it out to a thickness of about 1 centimeter or slightly more for soft cookies. Sprinkle additional flour on the surface, dough, and rolling pin as required.
  • Cut out as many shapes as possible from the dough, removing any excess dough from the edges of the cookies. Save the scraps to re-roll for more cookies.
  • Carefully move the cookies to the lined baking sheets, ensuring they are at least 1 inch apart.
  • Bake one tray at a time on the middle rack of the preheated oven for 7 to 8 minutes until the cookies are fluffy and slightly white on top. Remove immediately if they start browning at the edges. Let them sit on the tray for 1 minute, then transfer to a wire rack to cool as you bake the next batch.
  • Once the cookies have cooled, create the frosting by blending butter, egg white, and vanilla in a bowl until creamy. Gradually incorporate confectioners' sugar until a smooth consistency is achieved. Separate the frosting into separate bowls and stir in 2 to 3 drops of food coloring per bowl until well combined.
  • Spread a generous amount of frosting on the cooled cookies, ensuring a smooth finish. Place the cookies on wire racks and cover with waxed paper. Allow the frosting to set and harden for 8 hours to overnight.
