Mom's Giblet Gravy

Simmer neck and giblet gravy with white wine, celery leaves, and onion for 2 hours while the turkey cooks for a delicious pairing.
Ingredients:
  • 1 turkey neck and giblets
  • 6 cups chicken broth
  • 2 large white onions, sliced
  • 1 cup sliced carrots
  • 1 cup dry white wine
  • 0.5 cup celery leaves
  • 6 cloves garlic, peeled
  • 1 bay leaf
  • 0.5 cup turkey drippings, or to taste
  • 0.75 cup all-purpose flour
  • 6 tablespoons butter, softened
Instructions:
  • Halve the turkey neck. Save the liver for later.
  • In a large pot, mix neck, giblets, broth, onions, carrots, wine, celery, garlic, and bay leaf. Bring to a boil, then lower heat and simmer uncovered for 1 1/2 hours. Add liver and continue to simmer for an additional 30 minutes.
  • Combine the flour and butter until a thick paste forms.
  • After removing the neck and giblets, strain the broth by pressing the vegetables to extract liquid. Discard the vegetables. Incorporate the turkey drippings and gradually add the flour mixture, stirring until smooth. Bring the mixture to a boil and simmer for 7 to 10 minutes until it reaches your preferred thickness. Finish by seasoning with salt and pepper.
