Quick and easy 1-pot dish: Spicy chipotle ground turkey with onions, garlic, and bell peppers.
Ingredients:
  • 3 to 4 tablespoons extra virgin olive oil
  • 1 cup chopped yellow onion, including some chopped greens from scallions or green onions
  • 1 bell pepper (red or yellow preferred), chopped
  • 2 cloves garlic, minced
  • Kosher salt
  • 1 pound ground turkey, preferably ground turkey thighs
  • 1 teaspoon chipotle powder or chili powder (or to taste)
  • 2 tablespoons chopped fresh parsley or cilantro
Instructions:
  • In a hot skillet with 2 tablespoons of olive oil, sauté the onions, bell pepper, and garlic until softened and fragrant.
  • Position the vegetables to one side of the pan and move that side off the heat. Add an extra 1-2 tablespoons of oil to the empty side of the pan. Place crumpled ground turkey in the pan and season with salt and chipotle chili powder.
  • Sear the turkey until golden, then add the peppers and onions: Cook the turkey without moving until one side is nicely browned, then flip to brown the other side. Once cooked through, mix in the onions and peppers, season with extra salt and chili powder if desired. Take off the heat, stir in chopped parsley or cilantro.
