Colorful veggies soak in tangy tomato-vinegar marinade overnight, perfect for summer.
Ingredients:
  • 1 pound carrots, peeled and sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cucumber, peeled and sliced
  • 3 stalks celery, sliced
  • 1 cup cauliflower florets, broken into bite size pieces
  • 1 cup broccoli florets, broken into bite size pieces
  • 0.75 cup distilled white vinegar
  • 1 teaspoon ground black pepper
  • 1 teaspoon prepared yellow mustard
  • 0.25 teaspoon salt
  • 1 (10.75 ounce) can condensed tomato soup
Instructions:
  • Boil a pot of lightly-salted water. Cook sliced carrots for 3 minutes until tender. Drain in a colander, then cool in ice water. Once cold, drain well and transfer to a large glass or plastic bowl.
  • Combine the green pepper, onion, cucumber, celery, cauliflower, broccoli, and carrot in a bowl; set aside. In another bowl, whisk together sugar, vinegar, Worcestershire sauce, black pepper, mustard, and salt until the sugar starts to dissolve. Add vegetable oil and condensed tomato soup, whisk until smooth. Pour the marinade over the vegetables and mix well. Cover and refrigerate overnight for the flavors to meld.
