Elevate your potato salad with creamy mustard dressing for a tangy kick.
Ingredients:
  • 6 large potatoes - peeled and cubed
  • 3 large eggs
  • 1 onion, finely chopped
  • 3 stalks celery, diced
  • 1 (4 ounce) jar pimentos
  • 3 teaspoons sweet pickle relish
  • 3 tablespoons creamy salad dressing
  • 2 teaspoons prepared mustard
  • 1 teaspoon paprika
Instructions:
  • 1. Boil salted water in a large pot. Cook potatoes until tender but firm, approximately 15 minutes. Once cooked, drain and transfer to a large mixing bowl. Mash until smooth.
  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then cover the saucepan, remove from heat, and let the eggs sit in the hot water for 10 to 12 minutes. Remove the eggs from the hot water, cool, peel, and chop.
  • In a mixing bowl, blend together the potatoes, eggs, onion, celery, pimentos, and relish to create a flavorful mixture.
  • Combine the salad dressing and mustard, toss with the salad until well coated. Sprinkle with paprika and chill in the fridge until cold.
