Try these creamy Gruyere parsley potatoes, a delicious side for any meal!
Ingredients:
  • 2 pounds red potatoes, scrubbed and cut into 1-inch pieces
  • 0.25 cup unsalted butter
  • 1 cup chopped onion
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 0.66666668653488 cup sour cream
  • 0.33333334326744 cup shredded Gruyere cheese
  • 0.33333334326744 cup chopped fresh parsley
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer on medium-low heat until potatoes are barely tender, approximately 10 minutes. Drain and set aside.
  • In the same pot, melt butter over gentle heat. Add onion, season with salt and pepper, and cook until translucent, about 2 to 3 minutes. Stir in the potatoes, cover, and cook on low heat until tender, stirring occasionally, approximately 5 minutes.
  • After taking the mixture off the heat, gently fold in sour cream, Gruyere cheese, and parsley. Cover the dish and let it rest until the cheese is melted, roughly 5 minutes. Give it a final stir before serving.
