Mom's Pumpkin Rolls

Upgrade dinner rolls with vibrant and flavorful pumpkin puree.
Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 0.5 cup lukewarm water
  • 6 cups all-purpose flour
  • 0.75 teaspoon salt
  • 2 tablespoons butter
  • 1 cup white sugar, or as needed
  • 1 cup scalded milk
  • 1 cup pumpkin puree
  • 0.5 teaspoon white sugar, or as needed
Instructions:
  • In a bowl, mix yeast with lukewarm water until a creamy foam forms, about 20 minutes.
  • In a large bowl, combine flour, salt, butter, 1 cup white sugar, eggs, and yeast mixture. Stir in scalded milk and pumpkin puree until dough forms. Shape into a ball, place in a bowl, and cover with a towel. Allow to rise for 90 minutes.
  • Form the dough into 24 knotted rolls and place them on a baking sheet. Allow them to rise for an additional 30 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Whisk egg yolk with a hint of sweetness from 1/2 teaspoon of white sugar until fully dissolved, then delicately brush the tops of the rolls.
  • Preheat oven and place baking sheet on bottom rack. Bake rolls for 10 minutes, then move baking sheet to top rack and bake 6 to 10 more minutes until rolls are lightly browned.
