Treat Mom to delicious Cheesecake Banana Bread for a delightful tea time indulgence!
Ingredients:
  • 2 Free Range Eggs
  • 220g brown sugar
  • 300g self-raising flour
  • 250.00 ml pumpkin, coarsely grated
  • 2.50 gm ground nutmeg
  • 125ml buttermilk
  • 150g melted butter
  • 2 large ripe bananas, mashed
  • 30.00 gm caster sugar
  • 1 tsp vanilla bean paste
  • 1 Free Range Egg, extra
Instructions:
  • Combine the brown sugar, self-raising flour, pumpkin, and ground nutmeg in a large bowl.
  • Combine buttermilk, melted butter, 2 eggs, and mashed bananas in a bowl. Pour the mixture into the flour and stir until well combined.
  • In a bowl, use an electric mixer to blend cream cheese, caster sugar, and vanilla bean paste until well mixed. Then add one more egg and continue mixing until combined.
  • Alternate spoonfuls of the banana mixture and the cream cheese mixture in a greased and lined 10cm x 22cm loaf pan, then use a knife to create a marbled effect.
  • Bake at 180°C for 1-1 1/4 hours until a skewer inserted in the center comes out clean. Let it cool in the pan for 5 minutes, then flip it onto a serving plate. Enjoy warm or at room temperature.
