Elevate classic fried rice with smoky salmon for a quick and delicious main dish using leftover rice.
Ingredients:
  • 6 cups water
  • 3 cups long grain white rice, uncooked
  • 3 tablespoons cooking oil, divided
  • 2 eggs, beaten
  • 0.5 onion, finely chopped
  • 1 green onion, chopped
  • 4 ounces smoked salmon, chopped
  • 0.5 cup frozen peas
  • salt and freshly ground pepper, to taste
Instructions:
  • Place the water in a saucepan and combine with rice. Bring to a boil, then cover, lower the heat, and cook until the rice is tender and has absorbed all the water, approximately 20 minutes. Set aside.
  • Heat 2 tablespoons of cooking oil in a large skillet over medium heat. Add the eggs and scramble to your liking. Transfer the scrambled eggs from the skillet and set them aside.
  • In the same skillet over medium heat, heat the remaining 1 tablespoon of oil. Add onion and green onion; sauté until onion is translucent, about 5 minutes. Mix in salmon, rice, peas, and scrambled eggs; combine well. Cook and stir until rice mixture is heated through. Season with salt and pepper to taste.
