Flavorful spiced zucchini bread – perfect for breakfast or a delicious foodie gift.
Ingredients:
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract, or more to taste
  • 2 cups shredded zucchini
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon ground cloves
  • 0.5 cup chopped walnuts
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease two 9x5-inch loaf pans.
  • In a large bowl, delicately blend sugar, oil, eggs, and vanilla until velvety. Gently mix in zucchini. In another bowl, combine flour, cinnamon, salt, baking soda, nutmeg, baking powder, and cloves; gradually incorporate into the sugar mixture until fully blended. Add walnuts and raisins. Distribute batter evenly into loaf pans.
  • Bake in the oven until a toothpick inserted into the centers of each loaf comes out clean, approximately 50 minutes.
