Elevate classic tuna casserole with a creamy bacon sauce, corn, cashews, and a buttery Ritz® cracker topping.
Ingredients:
  • 1 (16 ounce) package egg noodles
  • 0.25 cup butter, or more to taste
  • 1 small onion, diced
  • 2 slices bacon, diced
  • 2 (5 ounce) cans tuna, drained and flaked
  • 0.25 cup all-purpose flour
  • 1.5 cups chicken stock
  • 0.5 cup milk
  • 0.5 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 cup shredded Cheddar cheese
  • 1 cup frozen corn
  • 0.5 cup chopped celery
  • 0.5 cup chopped cashews
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 sleeve buttery round crackers (such as Ritz®), crushed
Instructions:
  • Preheat the oven to 350°F (175°C) and generously butter a 9x13-inch casserole dish.
  • Fill a large pot with lightly salted water and bring it to a rapid boil. Cook egg noodles until al dente, about 7 to 9 minutes.
  • Simultaneously, melt 1/4 cup butter in a skillet over medium heat. Cook onion and bacon until onion is tender and bacon is crisp, about 8 to 10 minutes. Stir in flour and cook for an additional 2 minutes. Combine chicken stock, milk, mayonnaise, and soy sauce, whisking until smooth. Transfer the flavorful sauce to a large bowl after removing from heat.
  • After draining the pasta, combine it with the sauce mixture. Mix in the Cheddar cheese, corn, celery, cashews, salt, and pepper. Transfer the mixture to the prepared casserole dish, then sprinkle crushed Ritz® crackers on top.
  • Bake in the oven until hot and bubbly, about 15 to 20 minutes.
