Delicious, speedy noodles ready in under 30 minutes.
Ingredients:
  • 1/2 bunch green shallots
  • 500g Organic Beef Mince
  • 227g packet dried chow mein noodles
  • 2 green capsicums, thinly sliced
  • 250g savoy cabbage, thinly sliced
  • 20.00 ml finely grated fresh ginger
  • Sliced fresh red chilli, to serve
  • 60ml (1/4 cup) Chinese cooking wine
  • 43.20 gm hoisin sauce
  • 24.40 gm oyster sauce
  • 21.00 gm soy sauce
  • 20.00 ml black vinegar or rice wine vinegar
  • 14.40 gm honey
Instructions:
  • Cut the pale section of the shallots into 5cm lengths and slice the dark section into thin strips.
  • Combine all the sauce ingredients in a bowl and whisk until the honey is fully dissolved.
  • In a sizzling wok with shimmering oil, sear beef until golden brown, gently crumbling any clumps for 8 minutes. Remove beef with a slotted spoon and place in a waiting bowl.
  • Cook the noodles in a large saucepan of boiling water for 2 minutes until tender. Drain and cover to keep warm.
  • Place pale shallot lengths into the wok and stir-fry for 1 minute. Add capsicum and cabbage, stir-frying for 2 minutes until tender. Stir in ginger and garlic for an additional minute. Put the beef back into the wok, then pour in the sauce. Allow it to come to a simmer, cooking for 1-2 minutes until the sauce thickens.
  • Top the stir-fry noodles with dark shallot strips and chili before serving.
