Classic Chinese stir-fry with pork, mushrooms, and noodles on Chinese pancakes. Recipe serves 2, easily scalable.
Ingredients:
  • 1 teaspoon cooking oil
  • 1 egg, beaten
  • 5 ounces pork tenderloin, sliced into thin strips
  • 1 dash salt
  • 1 dash ground black pepper
  • 1 dash ground Sichuan pepper
  • 0.5 ounce dried cloud ear mushrooms
  • 1 ounce bean thread noodles
  • 1 teaspoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 bunch scallions, cut into 3/4-inch lengths
  • 0.33333334326744 cup shredded napa cabbage
  • 2 tablespoons hoisin sauce
  • 1 teaspoon grated ginger
  • 1 teaspoon sake
  • 1 teaspoon soy sauce
  • 1 clove garlic, grated
  • 8 frozen Chinese moo shu pancakes, thawed and warmed
Instructions:
  • Heat cooking oil in a square Japanese omelet pan or small skillet over medium heat. Add beaten egg, spread evenly, and cook for 3 to 5 minutes until just set. Transfer to a cutting board lined with a paper towel to cool.
  • Season pork generously with a flavorful trio of salt, black pepper, and aromatic Sichuan pepper. Allow the flavors to meld while you prepare the next step.
  • In a bowl, soak cloud ear mushrooms in warm water. In a separate bowl, do the same with noodles. Let both soak until reconstituted and soft, approximately 5 minutes.
  • Slice mushrooms thinly after draining and cut noodles into shorter lengths after draining.
  • In a hot frying pan or wok, sizzle sesame oil. Add pork and stir until it turns color, approximately 3 minutes. Toss in mushrooms and noodles, cook for another minute. Drizzle in oyster sauce and soy sauce, stir until everything is coated evenly, about 1 minute. Plate and serve.
  • Divide the scallions, cabbage, and cooked egg among serving dishes.
  • Mix together the hoisin sauce, ginger, sake, soy sauce, and garlic in a small bowl.
  • Warm the moo shu pancakes on a microwave-safe plate for 45 seconds in the microwave.
  • Set a platter of moo shu pancakes in the center of the table, and place bowls of meat, vegetables, and sauce around them. To enjoy, take a moo shu pancake, spread it with sauce, add pork mixture, egg, and veggies as desired, wrap it up, and savor every bite.
