Moon and star brownie cakes

Delicious brownie cupcakes, great for kids' birthdays.
Ingredients:
  • 100g good-quality milk chocolate
  • 100g good-quality dark chocolate
  • 125g unsalted butter, chopped
  • 107.50 gm caster sugar
  • 45.00 gm brown sugar
  • 2 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 250.00 ml plain flour, sifted
  • 75.00 gm icing sugar mixture
Instructions:
  • Preheat your oven to 180°C and prepare a 12-hole muffin pan with 1/3-cup patty pan cases.
  • Chop milk and dark chocolate into squares. Combine the chocolate squares with butter, caster sugar, and brown sugar in a saucepan over low heat. Stir until the chocolate and butter are melted. Transfer the mixture to a bowl and let it cool to room temperature.
  • Gently mix in the egg and vanilla extract into the chocolate mixture until fully incorporated. Then, add the flour and stir until just combined.
  • Fill patty pan cases two-thirds full with the mixture. Bake for 20 minutes or until a skewer comes out with crumbs clinging. Let the cakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Place a whimsical moon or star stencil on each individual cake following the template in the Notes. Lightly dust with delicate icing sugar. Lift the stencil to reveal the charming design. Continue with the remaining cakes. Serve and enjoy!
