Brazilian fish stew with traditional Northeastern roots, flavored with rich palm oil.
Ingredients:
  • 4 (4 ounce) fillets sea bass
  • 4 tablespoons lime juice
  • 3 cloves garlic, crushed
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons grated onion
  • 3 tablespoons palm oil
  • 1 large onion, cut into rings
  • 1.5 cups water
  • 0.5 (14 ounce) can coconut milk
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 tomatoes, seeded and sliced
  • 1 bunch chopped fresh cilantro
  • 0.5 bunch green onions, chopped
Instructions:
  • Rinse the sea bass under cold running water and gently pat it dry. Transfer it to a shallow dish and season it with lime juice, garlic, and salt. Allow it to marinate for 30 minutes.
  • In a large skillet over medium heat, warm olive oil. Quickly sauté grated onion, then add fish and marinade, cooking for 3 to 5 minutes. Incorporate palm oil, onion rings, water, and coconut milk. Allow it to simmer for 15 minutes. Finally, add green bell pepper, red bell pepper, tomatoes, cilantro, and green onions. Cover and cook until vegetables are tender and flavors meld, approximately 5 minutes.
