Spiced molasses cookies with whole wheat flour for a healthier twist.
Ingredients:
  • 0.33333334326744 cup molasses
  • 0.25 cup shortening
  • 2 tablespoons packed brown sugar
  • 1.25 cups all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 1 pinch ground nutmeg
  • 1 dash ground allspice
  • 1 cup confectioners' sugar
  • 0.5 teaspoon vanilla extract
  • 1.5 tablespoons half-and-half cream
Instructions:
  • In a large bowl, combine molasses, shortening, and brown sugar. Add flour, salt, baking soda, baking powder, and spices. Cover and refrigerate for about 4 hours until firm.
  • Preheat oven to 375°F (190°C) for the perfect bake.
  • Roll out half of the dough on a floured cloth-covered surface until it's very thin, about 1/8 inch. Use a 3-inch floured cutter to cut out rounds.
  • Arrange the dough 1/2 inch apart on an ungreased cookie sheet. Bake 1/8 inch thick cookies for approximately 8 minutes, or paper-thin cookies for about 5 minutes, until they are lightly browned. Remove from the cookie sheet right away and let them cool completely.
  • Prepare the frosting by combining 1 cup of confectioners' sugar, 1/2 teaspoon of vanilla, and 1-2 tablespoons of half-and-half until smooth and spreadable. Spread the frosting over the cooled cookies.
