Authentic Morelos-style tomatillo salsa, perfect for taquitos, huevos rancheros, and grilled meats. Versatile and flavorful!
Ingredients:
  • 2 pounds tomatillos, husked
  • 2 fresh jalapeno peppers
  • 3 cloves garlic, peeled
  • 1 dash cloves
  • 0.5 teaspoon ground cumin
  • 1 dash black pepper
  • 1 teaspoon chicken bouillon granules, or salt
Instructions:
  • In a large pot, combine tomatillos, jalapenos, and garlic. Add enough water to just cover the tomatillos, pressing them down with your hand as you pour. Bring to a boil over high heat, then lower the heat to medium-low and simmer until the tomatillos turn a lighter yellow color, approximately 10 minutes. Remove from heat and let cool for about 10 minutes.
  • Strain the tomatillos, keeping the water. Add to a blender with cloves, cumin, pepper, and chicken bouillon. Blend until smooth, using reserved water to adjust consistency.
