Crispy fried wild morels elevate their earthy, nutty flavors in this simple and delectable springtime dish.
Ingredients:
  • 1 pound fresh morel mushrooms - dirt gently brushed off and mushrooms halved lengthwise
  • 1 cup all-purpose flour
  • 1 cup vegetable shortening
  • salt to taste
Instructions:
  • In a large bowl, soak halved morel mushrooms in cold, lightly salted water. Refrigerate for 5 minutes to loosen dirt, then rinse mushrooms thoroughly three times. Check crevices for any debris. Finally, drain the mushrooms on paper towels before using.
  • Add the flour to a shallow bowl and heat the vegetable shortening in a large skillet until very hot.
  • Coat mushrooms with flour, shaking off any extra; carefully place mushrooms in the hot shortening.
  • Pan-fry the morels until they are golden brown, the flour coating is crisp, and they are cooked through, which should take about 5 to 8 minutes. Turn them often for even cooking. Drain the cooked morels on paper towels, season with salt according to your preference, and savor these delightful treasures!
